Batter fried squid

“A seafood lover will not miss the squid specially when buttery & crispy fried squid ring with spicy sauce. It will fly high with your cocktails or mocktails as a tiny bite starter. Sweet & spicy sauce along with melted fried squid will change your monotonous taste buds.”
  • Squid whole (large) – 3 pcs / 500 gm
  • Lemon juice – 8-10 ml
  • Garlic clove – 4 Pcs
  • Whole pepper corn – 8 pcs
  • Bay leaf -1 pc
  • Salt – 1 Tbsp
  • Fresh coriander root – 1 pcs
  • Milk – 100 ml
  • Chilli garlic paste – 1 tsp
  • Chilli flakes – 2 gm
  • Honey – 25 ml
  • Refined flour – 50 gm
  • Corn flour – 70 gm
  • Rice flour – 50 gm
  • Baking powder – ½ tsp
  • Chilled water – ½ cup
  • Oil – 250 ml

Step – 1 (Cleaning of Squid)

Nicely clean the squid.

Step – 2 (Soaking of Squid Ring)

Cut the squid in thick ring. Soak the squid ring in herbs (Crushed fresh garlic, whole pepper corn, bay leaf, fresh coriander root, salt) infused milk for 1 hour.

Step – 3 (Preparing of Batter)

Take a deep container for mixing of refined flour, corn flour, rice flour, salt, baking powder & mix it nicely. Then slowly & step wise add chilled water & stir it again. Make a thick & smooth coating batter, finally mix with 5 ml of oil.

Step -4 (Lemonade & Dusting of Squid

Now take out the squid ring from solution & mix with freshly squeezed lemon juice. After that dust or coat the lemon marinated squid ring with corn flour before dip in batter to make it crispier.

Step – 5 (Preparation of Sweet Chilli Garlic Sauce)

Sauté de-seeded chilli flaked in oil to get burnt flavor. Later add some water & chilli garlic paste, cook little more. Then add honey & cook further to get a dipping & saucy consistency.

Step – 6 (Coat in Batter & Frying of dusted Squid Ring)

Now dip the dusted squid in the batter & deep fry it in moderate heated oil. Fry it nicely till it gets cooked, crispier & golden brown in color. Don’t overcook the squid to avoid chewiness.

Step -7

Serve hot the fried squid ring with sweet chilli garlic sauce as a starter.
