Saagwala Malai Kathal Kofta

“Jackfruit is always count as unique vegetable and create kofta along with Spiced spinach gravy will be mouth watering.”
  • Raw Jackfruit / Kathal - 300gm
  • Paneer – 50gm
  • Fresh coriander – 10gm
  • Onion – 2 pieces medium
  • Tomato – 1 medium
  • Ginger – 40 gm
  • Garlic – 50gm
  • Green chilly – 3 pieces
  • Bay leaf – 2 gm
  • Dry whole red chilly – 4 pieces
  • Green cardamon – 3 pieces
  • Cinnamon stick – 1 piece
  • Cumin seed – ½ tsp
  • Salt – to taste
  • Turmeric powder – 1 tsp
  • Red chilli powder – 1tsp
  • Fresh cream – 2 tbsp
  • Butter – 20 gm
  • Fresh spinach – 200 gm
  • Oil – 150ml
  • Besan / roasted gram flour – 1 tbsp
  • Cumin powder – 2 tsp

Method

1. Boil spinach for few mins, cool it in cold ice water

2. Grate paneer. Peel and clean the Jackfruit – grate nicely.

3. Sauté grated jackfruit, cook properly till it turns golden brown in color

4. Whole cumin, Fine chop onion, chop ginger, chop garlic, chop green chilly , chop coriander , add cooked jackfruit , grated paneer , turmeric powder – ½ tsp, cumin powder ½ tsp , red chilly powder ½ tsp, salt to taste , besan / roasted gram flower – 1 & ½ tsp for binding – mix it nicely .

5. Make dumpling with the mixture, with nice round shape.

6. Deep fry the dumpling in moderate heated oil till get cooked and turn golden brown in color.

7. Take 10 ml oil in medium heated pan. Add whole red chilly, cinnamon stick, whole green cardamom, whole cumin, tempered till it get cracked. Add slice garlic and cook further. Add chop onion and cook for few mins, later add chop tomato and slitted green chilly. Cook until the mixture gets soft. Add red chilly powder – ½ tsp, cumin powder – ½ tsp and turmeric powder – ½ tsp, salt to taste. Add boiled spinach paste. Finally finish with 2 tbsp fresh cream and 3 gm of butter.

8. Arrange the spinach gravy and fried kofta on a plate and garnish with fresh cream, ginger and fried red chilly.
